HACCP (Hazard Analysis Critical Control Points) is a systematic approach to food safety. Paddl helps you create, manage, and maintain HACCP plans that meet UK food safety requirements.
Creating a HACCP Plan
To create a new HACCP plan, navigate to Compliance → HACCP in the admin panel and click Generate HACCP Plan.
Paddl's AI will generate a comprehensive HACCP plan based on your business type and operations. The plan covers all seven HACCP principles:
Conduct a hazard analysis
Determine Critical Control Points (CCPs)
Establish critical limits
Establish monitoring procedures
Establish corrective actions
Establish verification procedures
Establish record-keeping procedures
Managing Critical Control Points
Critical Control Points (CCPs) are steps in your process where control can be applied to prevent, eliminate, or reduce food safety hazards. Each CCP includes:
Hazard description and type (biological, chemical, physical)
Critical limits (e.g., minimum cooking temperature)
Monitoring procedures and frequency
Corrective actions if limits are exceeded
Responsible staff members
To edit a CCP, click on it from the HACCP plan view. You can update limits, monitoring procedures, and assign different team members.
Recording Corrective Actions
When a CCP limit is exceeded, you must record a corrective action. This documents what went wrong and how it was resolved. To add a corrective action:
Open the relevant CCP
Click "Add Corrective Action"
Describe the deviation and action taken
Record who took the action and when
Save the record
HACCP Reviews
HACCP plans should be reviewed regularly and whenever there are changes to your processes, menu, or equipment. Paddl tracks review due dates and sends alerts when reviews are needed.
To complete a review:
Go to the HACCP plan
Click "Complete Review"
Confirm all CCPs are still valid
Note any changes made
Sign off on the review
Signatures and Sign-offs
Team members can be assigned to sign off on HACCP plans and reviews. This creates an audit trail showing who has acknowledged and agreed to follow the procedures.
Exporting for EHO
You can export your HACCP plan as a PDF for Environmental Health Officer inspections. Click Export PDF from the HACCP plan page. The export includes all CCPs, monitoring records, corrective actions, and review history.
